Day 4 and the start operation skinny Rach


Yummy bacon & cheese stuffed potato's that is actually a Weight Watchers recipe.
It's so simple with no hard work involved.
Preheat the oven to 190oC/gas mark 5, wash and dry a medium sized potato (approx 200g), prick with a fork and mist with low calorie oil (something like fry lite), rub in a little salt and pepper and cook for approx 1 hour. When potato is almost done fry 2 rashers of Weight Watchers bacon and slce into stripes or small pieces. Remove potato from oven, split in half and scoop out most of the potato into a bowl, add the bacon and 50g Weight Watchers low fat soft cheese (or if you prefer 30g WW grated cheese). Mix it all together and add back into the potato skins. Place under the grill for 5-10 minuets.

So simple and so yummy and only 7 pro points. Why not have them with salad or a skinless chicken breast.
